Beyond Adobo Filipino Cooking

Course Overview

The cuisine of the Philippines is a medley of flavours influenced by years of trade and colonisation. 

From indigenous ingredients and methods, the diverse tapestry reflects the country’s long and varied cultural influences, from Malay, Chinese, Spanish and American. But the archipelago’s abundant coastline, fertile lowlands and mountainous regions all play a significant role in the culinary traditions of the Philippines. This cooking workshop is a great way to learn about, and experience the rich flavours of the Philippines’ cuisine and where you will learn how to cook some of the most popular dishes, from adobo to pancit and beyond. Traditional dishes you’ll find in Filipino homes and an insight into what is Filipino cuisine. 

In this workshop, the students will learn hands-on cooking of several Filipino classic dishes, sample the fresh ingredients, where to source them, (e.g., sample varieties of vinegar for the adobo workshop), prep and cook, while learning each recipe and its history, tips and tricks and they get taste the dishes. 

The students will be able to identify key ingredients and flavours used in Filipino kitchens, prepare a variety of dishes at home, understand the basic principles of Filipino cooking such as use of vinegar in many dishes and develop an appreciation of the cuisine. And everyone will get to enjoy the dishes with fellow students during the class. Rice provided.

All dishes cooked on the day can be taken home, and printed recipes for all dishes prepared in the class.

Menu

Students will learn the art of crafting Lumpiang Shanghai (fried spring rolls) and Sariwang Lumpia (fresh spring rolls).

The fried spring rolls are generously filled with a savory mixture of pork and veggies, expertly deep-fried, and served alongside a delightful sweet chili sauce. Not only is this recipe suitable for advance preparation, but it can also be frozen for convenience.

On the other hand, the fresh spring rolls are filled with sautéed veggies and crisp lettuce, complemented by a peanut-based sauce. A unique aspect of this class is the opportunity to create the wrappers from scratch during the session. Join us for a comprehensive and enjoyable workshop, where you'll gain the skills to master both versions of these delectable spring rolls.
